According to the university’s press service, the technology can quickly identify the correct enzymes needed to break down each type of milk protein.

The program instantly suggests the required enzyme, simplifying the protein breakdown process for scientists and manufacturers. This helps address the issue of import substitution in dietetic foods intended for people with diabetes, cardiovascular disease, and hypertension.
